Skinny tomato soup


This recipe is so delicious twist of the old fasioned tomato soup that will help you loose weight and put it repeatedly in your diet plane.

Ingredients :

  • 25 gram butter

  • 1 tablespoon vegetable oil

  • 1 large onion chopped

  • 1 clove of garlic crushed

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon chili powder

  • 1/4 cup plain flour

  • 1 kg tomatoes quartered

  • 2 cups of water

  • 2 tablespoon tomato paste

  • 1/2 teaspoon salt

  • 2 stock cubes

  • 4 cups skimmed milk

  • 1/2 cup chopped fresh coriander

Instructions :

  • Heat a large pot , heat the butter and the oil

  • Add onion , garlic , peppers and chili

  • Stir all on high heat for 1 minute

  • Add flour and stir on low heat for 2 minutes

  • Add tomatoes ,water , tomato paste and salt

  • Stir and cover , leave to simmer on low heat until tomatoes are soft ( 10 - 15 minutes )

  • Blend tomato mixture portion by portion and add cold milk with it in the blender

  • Using fine sieve strain tomato soup to discard skin and seeds then out it back in the pot

  • Reheat the soup till hot

  • Add coriander and serve

  • Serving 6 cups
