Skinny tomato soup
This recipe is so delicious twist of the old fasioned tomato soup that will help you loose weight and put it repeatedly in your diet plane.
Ingredients :
25 gram butter
1 tablespoon vegetable oil
1 large onion chopped
1 clove of garlic crushed
1/2 teaspoon black pepper
1/2 teaspoon chili powder
1/4 cup plain flour
1 kg tomatoes quartered
2 cups of water
2 tablespoon tomato paste
1/2 teaspoon salt
2 stock cubes
4 cups skimmed milk
1/2 cup chopped fresh coriander
Instructions :
Heat a large pot , heat the butter and the oil
Add onion , garlic , peppers and chili
Stir all on high heat for 1 minute
Add flour and stir on low heat for 2 minutes
Add tomatoes ,water , tomato paste and salt
Stir and cover , leave to simmer on low heat until tomatoes are soft ( 10 - 15 minutes )
Blend tomato mixture portion by portion and add cold milk with it in the blender
Using fine sieve strain tomato soup to discard skin and seeds then out it back in the pot
Reheat the soup till hot
Add coriander and serve
