Low carbs stuffed vine leaves

Ingredients :

  • 1/2 kilogram vine leaves

  • 1 cup minced meat

  • 1 onion fin chopped

  • 1 cup tomato puree

  • 1 cup chopped parsley

  • 1 cup chopped coriander

  • 1 cup grated carrots

  • 1 tablespoon dried mint leaves

  • 1/4 cup lemon juice

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon 7 spices

  • 1/2 cup boiling water stock and boiling water

  • 1 stock cubes

  • 1 onion slices

Instructions :

  • Prepare vine leaves for stuffing by boiling water in a large pan and add vine in patches for 5 minutes and leave to cool then remove the stem of each leave

  • Cook minced meat , 7 spices and onion in a small pot on low heat for about 1/2 hour or until all water is evaporated

  • prepare the filling by mixing carrots , parsley , coriander , cooked minced meat , tomato puree , olive oil , lemon juice , dried mint , salt and black peppers

  • Place leaves vein side up on board , place a rounded teaspoon of filling on each leave , roll up firmly , folding in sides to enclose filling

  • Cover base of 25 cm heavy-based pan with onion slices Place rolls in layers

  • Pour over combined stock cube and boiling water

  • Simmer , covered over low heat about 1 hour or until cooked through

Variations : replace carrots with rice or use half rice and half carrots
