Filo pastry with spinach & cottage cheese filling
This recipe is so delicious . you might think it is heavy calorie meal but we made twists that makes it more nutritious , delicious , low caloric and low fat .Once you try it you will love to repeat it often .
Ingredients :
1 Filo pastry backet
250 gm cottage cheese
1 tablespoon oil ( for brushing the filo papers )
1 cup of half cream milk
1 egg
1 tablespoon sesame seeds
1 table spoon black seeds
1/4 teaspoon black peppers
1/2 teaspoon salt
Spinach filling :
2 bracket frozen spinach 400 gm each
1 large onion chopped
Juice of 1 large lemon
1 cup fresh coriander chopped
1 table spoon vegetable oil
1 clove of garlic
Instructions :
To make the filling
In a large size pan heat 1 table spoon vegetable oil
add onions ,garlic, salt,peppers and stir on high heat for 2 minutes
add frozen spinach and stir on high heat until all water vapour and almost dry
add chopped coriander and lemon juice , stir and get it off heat and leave the mixture to cool
To make the recipe :
using the remaining oil . wet your fingers with oil lightly and brush a suitable size oven tray
layer the filo pastry in the tray brushing lightly with oil by finger tips every 2-3 filo sheets till half the amount is done
In the middle add the cool filling and top it with pieces of the cottage cheese
Repeat layering filo sheets as before
In a small bowl mix milk , egg , salt and pepper
Pour the milk egg mixture on the filo pastry
Sprinkle the surface with sesame and black seeds
bake in moderately hot oven ( 200 c ) from down for 30 minutes or until surface is browned
This recipe is : low fat and if cottage cheese is substituted by tofu it is vegetarian
