Baked chicken thighs with bell peppers

This is a family size meal and can be divided for one person for many days if you are interested in meal preparation ahead . You can use half the recipe ingredients to make only 4 chicken thighs .

Ingredients :

  • 8 chicken thighs

  • 1 large onion

  • 1 large potato peeled

  • 1 red pepper

  • 1 yellow pepper

  • 1 green pepper

  • 1 large carrot

  • Juice of 3 lemons

  • 1 tablespoon olive oil

    spices :

  • 1 teaspoon salt

  • 1/2 teaspoon black peppers

  • 1 teaspoon dried garlic

  • 1/2 teaspoon chilli

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon cloves

  • 1 teaspoon sommak ( Lebanese spice lemony in tast but it is optional )

Instructions :

  • Cut the bell peppers into slices

  • cut the onion into wedges

  • cut the potato into slices

  • mixe all spices with lemon juice and oil and marinade chicken thighs with the marinade for at least 1 hour or over night

  • Add vegetables to the marinated chickens and pour in oven tray

  • Cover the tray with foil and bake on high heat for 30 minutes then uncover the chickens and bake for more 45 minutes on medium heat or till chickens are browned

  • last 30 minutes soak a brush in the fluids under the chickens and brush the surface to give it a nice color
